Black Forest Avocado Mousse

Can we get a round of applause for the avocado, please? I love this creamy fruit! The color, the texture, the versatility, the fiber! It’s a little nutrition powerhouse and it makes me so happy to put that into something fun and sweet.

1 serving of this Black Forest goodness has 34.6 grams of carbohydrates, 7.4 grams of protein, 11.6 grams of fiber (almost HALF your recommended daily intake!), and 12.8 g of fat.

Ingredients

Makes 2 servings

  • 1 ripe avocado

  • 3 Tbsp of raw cacao

  • 1 Tbsp of Maple Syrup or sweetener of choice

  • 5 Tbsp of filtered water or malk of choice

  • 1 tsp of vanilla

  • Pinch of salt

  • Fresh cherries to top

  • Optional additional toppings - pistachios, shredded coconut, sunflower seeds, pumpkin seeds

Instructions

  1. Cut your avocado in half, de-pit, and scoop into a blender or food processor.

  2. Add the remaining ingredients - minus cherries and other toppings - into the blender.

  3. Blend until everything is smooth and creamy - 60 seconds on high.

  4. Allow to chill in the fridge and serve with your favorite toppings! If you can’t wait that long, it is delicious at room temperature too

Notes

  • If you want to add some protein powder 2 tbsp of collagen blends well
