Instructions

  1. Prep the Chicken: In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this spice blend onto the chicken thighs.

  2. Assemble: Place the chicken thighs into the slow cooker in a single layer. Pour the chicken broth or water around the edges (not over the chicken to preserve the spice rub).

  3. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender and fully cooked (165°F internal temperature).

  4. Serve: Use a slotted spoon to remove the chicken. Garnish with fresh parsley, if desired.

Notes

  • If you have extra time for flavor: To add more depth and a golden, caramelized finish, pan-sear the chicken thighs before adding them to the slow cooker. Heat 1–2 tablespoons of oil in a large skillet over medium-high heat. Sear the chicken thighs, skin-side down (if using skin-on), for 2–3 minutes per side, until golden brown. Transfer directly to the slow cooker and continue with the recipe as written.
