Air Fryer Acorn Squash

I have been on an air fryer kick since we were gifted one a month ago! The only downside is the smoke alarm in our Brooklyn apartment can’t handle the heat - HA! I love acorn squash but it takes longer to cook in the oven so I don’t have it as often BUT the air fryer cuts the time down so much. This is delicious and you can use what ever spices speak to you.

Makes 4 Servings, Total Time: 20 minutes

Ingredients

  • 1 Acorn Squash

  • 1 tbsp of Olive Oil or Avocado Oil

  • 1 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp salt

Instructions

  1. Slice the squash in half and scoop out the seeds. Place squash halves cut side down on a cutting board and slice into half moons, about 1/2 -inch thick.

  2. Place the squash slices in a large bowl and drizzle with olive oil. Add the cumin, garlic powder, onion powder, and salt. Mix well.

  3. Preheat air fryer to 390°F.

  4. Place the squash in the air fryer basket. Cook for 10 - 15 minutes, shaking the basket every 5 minutes until you reach your desired crispy-ness.

  5. enjoy!

Notes

  • I eyeball the spices and oil - change it up for your taste preferences
