
Ingredients:
- 1 cup of nuts or seeds – almonds, cashews, pecans, pistachios, pumpkin seeds, sunflower seeds, hemp seeds etc.
- 2 cups of water + more for soaking (for nuts)
- pinch of salt
- optional tsp of vanilla or cinnamon
- optional sweetener of choice
Instructions:
- Nuts: Place nuts in a bowl of water (enough to cover them completely) overnight. If you are in a time crunch you can boil them for 10 minutes.
- Rinse and drain the nuts
- Place the rinsed nuts or seeds in a high-speed blender with 4 cups of fresh water and a pinch of salt
- Blend on high for 2 minutes. There should be no bits of nut or seed left
- Enjoy!
Notes:
- You can strain the milk with a cheesecloth if you don’t want any of the pulp but I prefer to keep the pulp because it’s thicker and keeps some of the fiber
- If you prefer thicker milk, use less water
- If you prefer thinner milk add more water
- You can make smaller portions by using a 4:1 water to nut/seed ratio for example 1 cup of water to 1/4 cup of nuts/seeds
