Instructions

  1. Prepare the Short Ribs: Pat the short ribs dry with paper towels and season generously with salt and pepper.
  2. Sear the Short Ribs: Heat the olive oil in a large skillet over medium-high heat. Sear the short ribs on all sides until browned, about 2-3 minutes per side. Transfer to the crockpot.
  3. Sauté the Aromatics: In the same skillet, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional minute. Transfer to the crockpot.
  4. Combine Ingredients: Add the beef broth, red wine (if using), diced tomatoes, tomato paste, smoked paprika, thyme, and bay leaf to the crockpot. Stir gently to combine.
  5. Cook: Cover and cook on LOW for 8-10 hours or HIGH for 4-6 hours, until the short ribs are tender and falling off the bone.
